Let’s make it

  1. Dice aubergines and cook covered with a splash of water over low heat for 18 minutes.

  2. Add tomato, garlic, spices and oil; simmer 20 minutes, stirring and mashing the aubergine.

  3. Reduce until no longer watery; finish with lemon and serve warm.
