  • Eggs3 pieces
  • Crème fraîche190 ml
  • Milk80 ml

Let’s make it

  1. Heat oven to 190°C. Line a 22 cm tin with pastry. Prick the base and blind bake with weights for 12 minutes.

  2. Cook bacon until lightly coloured. Whisk eggs with cream and milk; season lightly.

  3. Scatter bacon over the pastry, add the egg mixture and bake 30–35 minutes until set in the centre. Rest for 10 minutes.
