Torta frita

Flat rounds made on rendered fat and deep-fried, which Uruguayans make when it rains.

Ingredients

Quantities for 8 servings.

  • 500 g Flour
  • 250 ml Hot water
  • 80 g Lard, melted
  • 1 tsp Baking powder
  • 1 l Oil for frying
  • 50 g Sugar, to serve
  • 200 g Dulce de leche, to serve
  • 1.5 tsp Salt

Method

  1. Mix the flour with the salt and baking powder in a large bowl.
  2. Melt the lard and stir it into the hot water until even.
  3. Pour the liquid into the flour and work it with a spoon until it cools enough to handle.
  4. Knead by hand for ten minutes to a smooth elastic dough.
  5. Cover it and rest it twenty minutes at room temperature.
  6. Divide it into eight, roll each into a half-centimetre round and cut a slit in the centre.
  7. Fry at 180 °C for a minute and a half a side and serve with sugar or dulce de leche.
