Sinigang

A sour tamarind soup with pork and vegetables. Sourness is the main flavour here, not an accent.

Ingredients

Quantities for 6 servings.

  • 800 g Pork ribs
  • 4 tbsp Tamarind paste
  • 1 piece Onion
  • 3 piece Tomatoes
  • 200 g Daikon, in rounds
  • 300 g Taro or potato
  • 150 g Green beans
  • 1 piece Aubergine
  • 150 g Kangkong or spinach
  • 2 piece Green chillies
  • 3 tbsp Fish sauce
  • 2 l Water

Method

  1. Cover the ribs with water, bring to the boil, skim and simmer for an hour with the onion and tomatoes.
  2. Crush the softened tomatoes in the pot: they give the broth its body.
  3. Add the tamarind paste and fish sauce, then taste. The sourness should be pronounced, not a hint.
  4. Add the taro and daikon and cook ten minutes, then the aubergine and beans for five more.
  5. Throw in the greens and chillies and take the pot off after thirty seconds. The greens should stay bright.
