Thin flatbreads fried in oil, the memorial bread of Kazakh tradition.

Ingredients

Quantities for 7 servings.

  • 500 g Flour
  • 300 ml Kefir
  • 1 piece Egg
  • 1 tbsp Sugar
  • 0.5 tsp Bicarbonate of soda
  • 50 g Butter, melted
  • 500 ml Oil for frying
  • 1 tsp Salt

Method

  1. Mix the kefir with the bicarbonate and leave it five minutes; the mixture foams.
  2. Add the egg, sugar, salt and melted butter and stir until even.
  3. Work in the flour a little at a time and knead a soft dough that stays slightly tacky.
  4. Cover it with a cloth and rest it half an hour at room temperature.
  5. Divide it into seven balls and roll each into a thin twenty-centimetre round.
  6. Prick each round in several places with a fork so it does not balloon in one bubble.
  7. Fry them in hot oil a minute a side, to golden spots, and drain them on paper.
