Selsko meso

Pork stewed with mushrooms, onion and wine in an individual clay pot, under cheese.

Ingredients

Quantities for 4 servings.

  • 700 g Pork shoulder, diced
  • 400 g Mushrooms
  • 2 piece Onions
  • 2 piece Bell pepper
  • 200 ml Dry white wine
  • 2 tbsp Tomato paste
  • 200 g Kashkaval cheese
  • 4 clove Garlic
  • 1 tbsp Paprika
  • 60 ml Vegetable oil
  • 20 g Parsley
  • to taste Salt and pepper

Method

  1. Brown the diced pork in oil on all sides.
  2. Add the onion and pepper and fry until soft, seven minutes.
  3. Add the mushrooms and cook over a high heat for five minutes, until their water has gone.
  4. Take it off the heat, stir in the paprika, garlic and tomato paste, add the wine and return it to the heat for three minutes.
  5. Divide between clay pots, top up with water to the level of the meat, season and cover.
  6. Bake at 180 °C for fifty minutes.
  7. Take the lids off, cover with grated kashkaval and give it ten more minutes, to a browned cheese crust.
