Sel roti

A ring of fermented rice batter deep-fried crisp outside and soft within.

Ingredients

Quantities for 8 servings.

  • 600 g Rice, soaked overnight
  • 150 g Sugar
  • 60 g Ghee
  • 150 ml Milk
  • 1 piece Banana
  • 1 tsp Ground cardamom
  • 0.5 tsp Ground cloves
  • 1.5 l Oil for frying
  • 1 pinch Salt

Method

  1. Soak the rice in cold water overnight, drain it and pat it dry with a cloth.
  2. Grind the wet rice in a blender with the milk to a smooth thick paste without grit.
  3. Work in the sugar, melted ghee, mashed banana, cardamom, cloves and salt.
  4. Beat the batter by hand for twenty minutes in circular movements, working air into it.
  5. Let the batter stand an hour; it ferments slightly and turns bubbly.
  6. Heat the oil to 165 °C and pour the batter into it in a ring, in one continuous movement.
  7. Fry two minutes a side, turning with two chopsticks, to a golden colour.
