Romazava

Meat in broth with brèdes mafana, a bitter green that makes the mouth tingle.

Ingredients

Quantities for 5 servings.

  • 500 g Beef, diced
  • 300 g Pork, diced
  • 300 g Brèdes mafana or watercress
  • 300 g Spinach
  • 200 g Mustard greens
  • 3 piece Tomatoes
  • 2 piece Onion
  • 5 clove Garlic
  • 30 g Ginger
  • 400 g Rice, to serve
  • 40 ml Vegetable oil
  • to taste Salt and pepper

Method

  1. Fry the onion, garlic and ginger in oil until soft, five minutes.
  2. Add both meats and the tomatoes and warm them through, without browning.
  3. Add a litre and a half of water, season and simmer an hour.
  4. Wash the greens and chop them coarsely, discarding tough stems.
  5. Add the mustard greens and spinach and cook ten minutes.
  6. Add the mafana for the last five minutes; long cooking weakens its effect.
  7. Serve in deep bowls with a large helping of boiled rice.
