Rolex

A vegetable omelette rolled in a chapati. Kampala street food, the name a slur of "rolled eggs".

Ingredients

Quantities for 4 servings.

  • 400 g Flour
  • 240 ml Warm water
  • 8 piece Eggs
  • 200 g Cabbage, finely shredded
  • 3 piece Tomatoes
  • 2 piece Onions
  • 1 piece Carrot
  • 1 piece Chilli
  • 120 ml Vegetable oil
  • to taste Salt and pepper

Method

  1. Knead a soft dough from the flour, warm water, a spoon of oil and salt and rest it twenty minutes.
  2. Roll a ball thin, brush it with oil, roll it into a rope, coil it like a snail and roll it out again.
  3. Cook the chapatis over medium heat, a minute and a half a side, and keep them under a cloth.
  4. Shred the cabbage, carrot, onion, tomatoes and chilli as fine as you can.
  5. Beat the eggs with the vegetables, salt and pepper; the vegetables belong inside the omelette, not on top.
  6. Pour a portion of egg into the pan, let it set and lay a chapati on top, pressing it down.
  7. Flip the two together, slide them onto a board omelette up and roll it tight.
