Ohn no khao swe

Wheat noodles in a thick coconut broth with chicken and chickpea flour.

Ingredients

Quantities for 5 servings.

  • 500 g Wheat noodles
  • 700 g Chicken thigh, in small pieces
  • 600 ml Coconut milk
  • 60 g Chickpea flour
  • 3 piece Onions
  • 6 clove Garlic
  • 30 g Ginger
  • 2 tsp Turmeric
  • 1 tbsp Paprika
  • 3 tbsp Fish sauce
  • 5 piece Eggs, boiled, to serve
  • 3 piece Limes
  • 2 tsp Chilli flakes
  • 100 ml Vegetable oil
  • to taste Salt

Method

  1. Pound the onion, garlic and ginger to a paste and fry it in oil with the turmeric and paprika.
  2. Add the chicken in small pieces and fry it until it whitens all over.
  3. Add a litre of water and the fish sauce and simmer twenty minutes.
  4. Slake the chickpea flour in a cup of cold water until completely smooth and lump-free.
  5. Pour the slaked flour into the broth in a thin stream, whisking without stopping.
  6. Cook ten minutes to thicken, add the coconut milk and warm it five minutes without boiling.
  7. Boil the noodles, divide them between bowls, ladle over the broth and serve with egg, lime and chilli.
