Moqueca baiana

Fish stewed in coconut milk with dendê palm oil, in a clay pot.

Ingredients

Quantities for 5 servings.

  • 1 kg White fish, firm fillet, in large pieces
  • 300 g Prawns
  • 400 ml Coconut milk
  • 60 ml Dendê palm oil
  • 2 piece Onions
  • 4 piece Tomatoes
  • 2 piece Bell peppers, mixed colours
  • 6 clove Garlic
  • 3 piece Limes
  • 50 g Coriander
  • 4 piece Spring onions
  • 400 g Rice, to serve
  • to taste Salt and pepper

Method

  1. Rub the fish with salt, pepper, crushed garlic and lime juice and leave it twenty minutes.
  2. Slice the onion, tomatoes and peppers into rings of the same thickness.
  3. Line the bottom of the clay pot with half the onion, tomato and pepper rings.
  4. Lay the fish in a single layer, the prawns and remaining vegetables over it, and season.
  5. Pour the coconut milk and dendê oil down the side, without dousing the fish from above.
  6. Cover and cook twenty minutes over medium heat, rocking the pot but never stirring.
  7. Scatter with coriander and spring onion and serve straight from the pot, with rice and farofa.
