Mchuzi wa samaki
Tanzanian fish curry on coconut milk with tamarind and curry powder.

Ingredients
Quantities for 5 servings.
- 1 kg White fish, in steaks
- 600 ml Coconut milk
- 3 tbsp Tamarind paste
- 2 piece Onions
- 3 piece Tomatoes
- 5 clove Garlic
- 30 g Ginger
- 2 tbsp Curry powder
- 2 piece Hot chilli
- 40 g Coriander
- 60 ml Vegetable oil
- to taste Salt
Method
- Rub the fish steaks with salt and half the curry powder and leave them fifteen minutes.
- Fry the fish two minutes a side to a crust and lift it onto a plate.
- Soften the onion in the same pan and add the garlic and ginger.
- Add the remaining curry powder and warm it a minute, until the aroma lifts.
- Add the tomatoes and chilli and reduce them to a thick base without loose liquid.
- Pour in the coconut milk with the tamarind and warm it without letting it boil.
- Return the fish to the sauce, let it sit five minutes and serve with rice and coriander.
