Mandazi

Triangular doughnuts on coconut milk with cardamom, lightly sweet, for tea.

Ingredients

Quantities for 8 servings.

  • 500 g Flour
  • 250 ml Coconut milk
  • 80 g Sugar
  • 7 g Dry yeast
  • 1 piece Egg
  • 2 tsp Ground cardamom
  • 50 g Butter, melted
  • 1 l Oil for frying
  • 0.5 tsp Salt

Method

  1. Warm the coconut milk and dissolve the yeast in it with a spoon of sugar.
  2. Mix the flour with the remaining sugar, the cardamom and the salt.
  3. Work in the egg, melted butter and the coconut yeast mixture and knead a soft dough.
  4. Let it rise somewhere warm for an hour, until doubled.
  5. Divide the dough into four, rolling each piece into a round a centimetre thick.
  6. Cut each round into four triangles and let them rest fifteen minutes.
  7. Fry at 170 °C for two minutes a side, to a golden colour.
