Lok lak

Cubes of beef seared over high heat, on salad, with a dip of lime and black pepper.

Ingredients

Quantities for 4 servings.

  • 600 g Beef sirloin, in three-centimetre cubes
  • 2 tbsp Oyster sauce
  • 2 tbsp Soy sauce
  • 5 clove Garlic
  • 1 tbsp Sugar
  • 2 tsp Ground black pepper
  • 3 piece Limes
  • 200 g Lettuce
  • 3 piece Tomatoes
  • 1 piece Cucumber
  • 1 piece Red onion
  • 4 piece Eggs
  • 40 ml Vegetable oil
  • to taste Salt

Method

  1. Marinate the beef in the oyster and soy sauces with garlic, sugar and half the pepper for twenty minutes.
  2. Mix the lime juice with the remaining pepper and a pinch of salt; that is the dipping sauce.
  3. Arrange the lettuce, tomato and cucumber slices and red onion rings on a platter.
  4. Heat a pan as high as it goes and sear the beef in batches, a minute and a half each, without stirring constantly.
  5. Fry the eggs, keeping the yolks runny.
  6. Pile the beef on the vegetables, top with the eggs and give everyone their own small bowl of the dip.
