A salad of fermented tea leaves with fried beans, nuts and garlic.

Ingredients

Quantities for 4 servings.

  • 150 g Fermented tea leaves
  • 80 g Fried peanuts
  • 60 g Fried broad beans
  • 40 g Sesame seeds
  • 6 clove Garlic, thinly sliced
  • 2 piece Tomatoes
  • 200 g Cabbage, finely shredded
  • 2 piece Chilli
  • 2 piece Lime
  • 2 tbsp Fish sauce
  • 60 ml Vegetable oil
  • to taste Salt

Method

  1. Fry the garlic slices in oil until golden and lift them out at once; a few seconds more and they turn bitter.
  2. Toast the sesame in a dry pan until fragrant, two minutes, stirring.
  3. Rinse the tea paste in cold water if it is very salty and squeeze it dry.
  4. Shred the cabbage fine, cut the tomatoes into wedges and the chilli into rings.
  5. Combine everything in a bowl with the peanuts, beans, sesame, garlic oil, fish sauce and lime juice.
  6. Toss it with your hands immediately before serving and scatter the fried garlic over the top.
