Kottu roti

Godamba roti chopped on the griddle with vegetables, egg and curry, worked with two cleavers.

Ingredients

Quantities for 4 servings.

  • 6 piece Roti or paratha, from the day before
  • 300 g Cooked chicken, shredded
  • 3 piece Eggs
  • 1 piece Onion
  • 1 piece Leek
  • 1 piece Carrot, julienned
  • 200 g Cabbage, shredded
  • 200 ml Chicken curry with sauce
  • 3 piece Green chillies
  • 2 tsp Curry powder
  • 4 tbsp Neutral oil
  • to taste Salt

Method

  1. Cut the roti into centimetre strips: that makes the chopping easier later.
  2. Heat a large pan with the oil, fry the onion, leek and chilli two minutes, add the carrot and cabbage and cook three more.
  3. Push the vegetables aside, break the eggs into the cleared space, let them set and break them up.
  4. Add the chicken, curry powder and strips of roti and start chopping with two spatulas, mixing as you go. Three minutes of real work.
  5. Pour the curry sauce down the side and keep chopping a minute more. The mixture should be moist but not wet.
