Kleicha

Biscuits of date paste and cardamom, rolled into a log and cut into slices.

Ingredients

Quantities for 12 servings.

  • 600 g Flour
  • 250 g Ghee
  • 150 ml Milk, warm
  • 5 g Dry yeast
  • 500 g Date paste
  • 2 tsp Ground cardamom
  • 1 tsp Mahlab
  • 1 tsp Ground fennel
  • 1 tsp Nigella seeds
  • 1 piece Egg yolk, for glazing
  • 30 g Sesame seeds
  • 1 tsp Salt

Method

  1. Dissolve the yeast in the warm milk and leave it ten minutes, until it foams.
  2. Rub the flour with the melted ghee, mahlab, fennel, nigella and salt.
  3. Add the yeast mixture and knead a soft dough, working it ten minutes.
  4. Cover it and rest it an hour at room temperature.
  5. Work the date paste with a spoon of ghee and the cardamom until pliable.
  6. Roll the dough into a rectangle, spread the paste in a thin layer and roll it into a tight log.
  7. Cut the log into centimetre slices, brush them with yolk, scatter with sesame and bake at 180 °C for twenty minutes.
