Jasha maroo

Chopped chicken in a thin broth with ginger, garlic and chilli. Bhutanese everyday cooking.

Ingredients

Quantities for 4 servings.

  • 1 kg Chicken, chopped through the bone
  • 60 g Ginger
  • 8 clove Garlic
  • 2 piece Onions
  • 3 piece Tomatoes
  • 6 piece Green chillies
  • 40 g Coriander
  • 50 ml Vegetable oil
  • 350 g Red rice, to serve
  • to taste Salt

Method

  1. Chop the chicken through the bone into pieces about the size of a matchbox.
  2. Pound the ginger and garlic to a coarse paste.
  3. Fry the onion in oil until soft, add the paste and cook it two minutes.
  4. Add the chicken and fry five minutes, until it whitens all over.
  5. Add the tomatoes and chillies, pour in water a finger above and season.
  6. Simmer twenty minutes; the broth should stay thin.
  7. Stir in the coriander and serve in deep bowls with red rice.
