Cracked wheat cooked with meat to a thick porridge, under fried onion.

Ingredients
Quantities for 6 servings.
- 400 g Cracked wheat, soaked two hours
- 800 g Lamb on the bone
- 3 piece Onions
- 3 piece Tomatoes
- 200 ml Yoghurt
- 2 tsp Baharat
- 2 piece Dried lime
- 80 g Ghee
- to taste Salt and pepper
Method
- Soak the cracked wheat in cold water for two hours and rinse it.
- Fry one onion in ghee, add the meat and brown it.
- Add the tomatoes, baharat and pierced limes, cover with water and cook forty minutes.
- Add the wheat, top up with water two fingers above and cook ninety minutes on a low heat, stirring.
- Remove the bones, stir in the yoghurt and beat the porridge with a spoon or a mixer until creamy and uniform.
- Fry the remaining onion dark brown and spoon it over the jareesh with its oil.
