Haleem

Meat, wheat and pulses cooked down and beaten into one smooth thick mass over six hours.

Ingredients

Quantities for 10 servings.

  • 1.5 kg Beef on the bone
  • 300 g Whole wheat, soaked overnight
  • 100 g Pearl barley
  • 150 g Chana dal
  • 100 g Red lentils
  • 5 piece Onions
  • 3 tbsp Ginger garlic paste
  • 2 tbsp Garam masala
  • 1 tbsp Chilli powder
  • 1 tsp Turmeric
  • 250 g Ghee
  • 60 g Ginger, to serve, in matchsticks
  • 6 piece Green chillies
  • 50 g Coriander
  • 3 piece Lemons
  • to taste Salt

Method

  1. Soak the wheat overnight and the chana dal and barley for four hours, then rinse them.
  2. Fry three onions in ghee until deep brown and set half aside for serving.
  3. Brown the meat with the remaining onion, the ginger garlic paste and all the spices.
  4. Cover with water and braise three hours, until the meat starts falling into threads.
  5. Boil the wheat, barley and both dals in a separate pot for three hours, until completely broken down.
  6. Remove the bones, combine the two and beat with a wooden masher for forty minutes, until uniform.
  7. Serve with the fried onion, ginger, chilli, coriander and lemon scattered on top.
