Garudhiya
A clear broth of fresh tuna, cooked in water with salt and almost nothing else.

Ingredients
Quantities for 4 servings.
- 800 g Fresh tuna, in large pieces
- 10 piece Curry leaves
- 1 piece Pandan leaf
- 2 piece Red onion, to serve
- 4 piece Chillies
- 3 piece Limes
- 400 g Rice, to serve
- to taste Salt
Method
- Cut the tuna into large pieces and rinse them under cold water.
- Cover with a litre and a half of cold water, salt it and bring it up.
- Skim for the first five minutes; the clarity of the broth depends on it.
- Add the curry leaves and pandan and cook twenty minutes on the lowest heat.
- Remove the leaves, check the salt and take it off the heat.
- Serve with rice, sliced onion, chilli and lime, each person adding them to their own bowl.
