Sudanese ful

Ful beans cooked soft and mashed in the pot, with sesame oil, cheese and egg.

Ingredients

Quantities for 4 servings.

  • 400 g Ful medames beans, soaked overnight
  • 60 ml Sesame oil
  • 150 g White brined cheese
  • 4 piece Eggs, boiled
  • 2 piece Tomatoes
  • 1 piece Onion
  • 4 clove Garlic
  • 2 tsp Ground cumin
  • 2 piece Lemon
  • 1 piece Chilli
  • 4 piece Flatbread, to serve
  • to taste Salt

Method

  1. Drain the soaked beans, cover them with fresh water and boil ninety minutes, until completely soft.
  2. Pour off most of the water, leaving half a cup, salt the beans and mash them about halfway.
  3. Crush the garlic with salt and cumin and stir it through the beans.
  4. Turn them into a wide bowl and pour the sesame oil over without stirring it in.
  5. Scatter over the crumbled cheese, chopped tomato, onion, chilli and halved eggs.
  6. Serve with lemon and flatbread. It is eaten by hand from the shared bowl.
