Ful medames

Fava beans stewed to a cream with olive oil, lemon and cumin.

Ingredients

Quantities for 4 servings.

  • 400 g Dried fava beans, soaked overnight
  • 4 clove Garlic
  • 2 piece Lemons
  • 80 ml Olive oil
  • 2 tsp Ground cumin
  • 2 piece Tomato, diced
  • 6 sprig Parsley
  • to taste Chilli flakes
  • to taste Salt

Method

  1. Drain the soaked beans, cover them with fresh water three fingers above and bring to the boil. Skim.
  2. Drop to the lowest possible heat and cook covered for three or four hours, until the beans start to collapse. Top up the water as needed.
  3. Mash about half the beans in the pot with a masher, leaving the rest whole.
  4. Stir in the crushed garlic and season. Divide between bowls.
  5. Into each bowl: olive oil generously, lemon juice, cumin, tomato, parsley and chilli to taste. Serve with flatbread.
