Chivito

A sandwich of thin steak, ham, bacon, cheese and a fried egg. Uruguay's national dish.

Ingredients

Quantities for 4 servings.

  • 500 g Beef tenderloin, in thin slices
  • 4 piece Buns
  • 150 g Ham
  • 150 g Bacon
  • 200 g Mozzarella
  • 4 piece Eggs
  • 2 piece Tomatoes
  • 100 g Lettuce
  • 60 g Green olives
  • 100 g Mayonnaise
  • 30 ml Vegetable oil
  • to taste Salt and pepper

Method

  1. Pound the beef under film to four millimetres and season it.
  2. Fry the bacon crisp and drain it on paper.
  3. Get the pan very hot and sear the steaks forty-five seconds a side.
  4. Lay the cheese on the meat in the pan and cover it for thirty seconds so it softens.
  5. Fry the eggs with runny yolks and toast the cut buns in a dry pan.
  6. Spread mayonnaise on both halves and layer lettuce, tomato, the steak with its cheese, ham, bacon and the egg.
  7. Close it, spear it with a cocktail stick and an olive, and serve with chips.
