Chakhokhbili

Chicken stewed without water in its own juices with tomatoes and a mountain of fresh herbs.

Ingredients

Quantities for 5 servings.

  • 1.5 kg Chicken, in pieces
  • 4 piece Onions
  • 800 g Tomatoes
  • 6 clove Garlic
  • 60 g Coriander
  • 40 g Purple basil
  • 30 g Tarragon
  • 40 g Parsley
  • 1 tbsp Khmeli suneli
  • 50 g Butter
  • 1 piece Chilli
  • to taste Salt and pepper

Method

  1. Brown the chicken pieces in a dry heavy pot without fat, to a golden crust.
  2. Lift out the meat, add the butter and soften the onion in the rendered fat.
  3. Skin the tomatoes, grate them and add them to the onion.
  4. Return the chicken, season, add the khmeli suneli and the whole chilli and cover the pot.
  5. Stew thirty minutes on a low heat, never adding water.
  6. Chop all the herbs and the garlic coarsely, not to a paste.
  7. Stir in the herbs and garlic, cover the pot, take it off the heat and let it stand ten minutes.
