Chakalaka

A spicy vegetable relish of carrot, pepper and beans with curry. For a braai, for pap, or on its own.

Ingredients

Quantities for 6 servings.

  • 4 piece Carrots, grated
  • 3 piece Bell peppers, mixed colours
  • 2 piece Onions
  • 400 g Baked beans
  • 400 g Tomatoes, chopped
  • 1 tbsp Curry powder
  • 1 tsp Paprika
  • 2 piece Chilli
  • 4 clove Garlic
  • 20 g Ginger
  • 50 ml Vegetable oil
  • to taste Salt and pepper

Method

  1. Grate the carrots coarsely and cut the peppers and onions into thin strips.
  2. Fry the onion with the garlic, ginger and chilli in oil until soft, five minutes.
  3. Add the curry powder and paprika and warm them a minute; the spices need to open up in the oil.
  4. Add the peppers and carrot and cook five minutes over a high heat, stirring.
  5. Add the tomatoes, season and cook seven minutes, until the sauce thickens.
  6. Stir in the beans, warm them three minutes and take the pan off. The vegetables should still have bite.
