Brik

A thin sheet of pastry with an egg inside, fried so the yolk stays liquid.

Ingredients

Quantities for 4 servings.

  • 4 piece Malsouka or filo sheets
  • 4 piece Eggs
  • 200 g Tinned tuna
  • 2 piece Potato, boiled and mashed
  • 1 piece Onion
  • 2 tbsp Capers
  • 30 g Parsley
  • 1 tsp Harissa
  • 500 ml Oil for frying
  • 1 piece Lemon
  • to taste Salt and pepper

Method

  1. Mix the mashed potato with the tuna, chopped onion, capers, parsley, harissa, salt and pepper.
  2. Heat the oil to 180 °C. Test with a scrap of pastry: it should surface at once and sizzle.
  3. Lay a sheet on a plate, put two spoons of filling on one half and make a hollow in it.
  4. Break an egg into the hollow, season it and fold the sheet over immediately, pressing the edges.
  5. Slide the brik into the oil and fry forty seconds a side, steadying it with a slotted spoon.
  6. Drain on paper and serve immediately with a wedge of lemon.
