Bosanski lonac

Meat and vegetables layered in a clay pot and cooked four hours without stirring.

Ingredients

Quantities for 6 servings.

  • 600 g Beef, in large pieces
  • 600 g Lamb, in large pieces
  • 500 g Cabbage
  • 600 g Potatoes
  • 4 piece Carrots
  • 4 piece Tomatoes
  • 3 piece Bell peppers
  • 3 piece Onions
  • 2 piece Parsley root
  • 1 piece Garlic, whole head
  • 150 g Smoked pork fat
  • 200 ml Dry white wine
  • 3 piece Bay leaves
  • to taste Salt and pepper

Method

  1. Cut all the vegetables into large pieces; they have to survive four hours without collapsing.
  2. Line the bottom of the pot with the diced pork fat, put the meat on it and season.
  3. Layer on the onion, carrot, parsley root, potato, peppers, cabbage and tomato.
  4. Tuck in the whole head of garlic and the bay leaves, pour in the wine and add water to half the height of the pot.
  5. Cover and put it in a 150 °C oven for four hours. Do not open it and do not stir.
  6. Serve straight from the pot, digging to the bottom so every layer reaches the plate.
