Bolani

An Afghan flatbread with a potato or leek filling, cooked on a dry pan.

Ingredients

Quantities for 6 servings.

  • 500 g Flour
  • 280 ml Warm water
  • 600 g Potatoes
  • 200 g Spring onions
  • 40 g Coriander
  • 1 tsp Chilli flakes
  • 250 ml Garlic yoghurt, to serve
  • 60 ml Vegetable oil
  • to taste Salt and pepper

Method

  1. Knead a soft dough from the flour, warm water, a spoon of oil and salt.
  2. Cover the dough and rest it thirty minutes.
  3. Boil the potatoes soft, drain them and mash them without milk.
  4. Work the spring onion, coriander, chilli, salt and pepper into the mash.
  5. Divide the dough into six and roll each into a thin round.
  6. Spread the filling thinly over half the round and fold the other half over, pressing the edge.
  7. Cook them on a brush-oiled pan, four minutes a side, until spotted.
