Coconut rice

Rice cooked in coconut milk with caramelised coconut solids, dark and faintly sweet.

Ingredients

Quantities for 6 servings.

  • 500 g Long-grain rice
  • 800 ml Coconut milk, full-fat
  • 400 ml Water
  • 2 tbsp Sugar
  • 80 g Raisins, optional
  • 1.5 tsp Salt

Method

  1. Pour the coconut milk into a heavy pot and cook it over medium heat, stirring.
  2. Keep cooking until the milk separates into oil and brown solids.
  3. The moment the solids turn deep brown, add the water at once to stop the caramelisation.
  4. Add the sugar, salt and raisins and bring it to the boil.
  5. Rinse the rice until the water runs clear and add it to the pot in an even layer.
  6. Cook uncovered over medium heat until the liquid falls to the level of the rice.
  7. Cover it, drop the heat to its lowest and hold it twenty minutes without opening it once.
