Anzac biscuits

Oat biscuits on golden syrup and bicarbonate, without eggs, keeping for weeks.

Ingredients

Quantities for 20 servings.

  • 150 g Rolled oats
  • 150 g Flour
  • 100 g Desiccated coconut
  • 150 g Brown sugar
  • 150 g Butter
  • 3 tbsp Golden syrup
  • 1 tsp Bicarbonate of soda
  • 2 tbsp Boiling water
  • 1 pinch Salt

Method

  1. Mix the oats, flour, coconut, sugar and salt in a large bowl.
  2. Melt the butter with the golden syrup over a low heat, without letting it boil.
  3. Dissolve the bicarbonate in the boiling water and pour it straight into the butter mixture; it foams up.
  4. Pour the foaming mixture into the dry ingredients and stir until even.
  5. Roll walnut-sized balls and set them on a tray with generous gaps between them.
  6. Flatten each ball with your palm to a centimetre thick; they spread further in the oven.
  7. Bake at 160 °C for twelve to eighteen minutes and cool them on the tray rather than a rack.
