Alfajores

Two crumbly cornflour biscuits joined with dulce de leche and rolled in coconut.

Ingredients

Quantities for 10 servings.

  • 300 g Cornflour
  • 200 g Flour
  • 200 g Butter
  • 150 g Icing sugar
  • 3 piece Egg yolks
  • 1 tsp Baking powder
  • 1 piece Lemon zest
  • 1 tsp Vanilla
  • 1 tbsp Brandy
  • 500 g Dulce de leche
  • 100 g Desiccated coconut
  • 1 pinch Salt

Method

  1. Beat the softened butter with the icing sugar until pale, about four minutes.
  2. Add the yolks one at a time, then the vanilla, zest and brandy.
  3. Sift the cornflour with the flour, baking powder and salt and fold it in without long working.
  4. Wrap the dough in film and refrigerate it an hour.
  5. Roll it half a centimetre thick and cut four-centimetre rounds.
  6. Bake at 170 °C for twelve minutes; the biscuits should stay pale, with only the underside going golden.
  7. Cool them completely, sandwich them in pairs with dulce de leche and roll the sides in coconut.
